- Add the flour stirring continuously to make a roué, then gradually add the milk stirring all the time
- Simmer for approx 4-5 minutes stirring so as not to burn or curdle the sauce untill the sauce thickens up
- Finally season with the salt, stir and serve over steak
For steak, I would definitely suggest making the red wine based sauce, adding beef pan juices to further intensify the flavour. Add cognac, heavy cream, and green peppercorns to the pan. Increase heat to high and cook, whisking continually, until sauce thickens slightly, just enough to coat the back of a spoon; this will. Homemade steak is great, but peppercorn sauce can make it fantastic. Whip up a classic peppercorn steak sauce using the drippings from the steak, cognac, cream, and black peppercorns.
