Stroganoff

A rich, creamy stroganoff that's even better reheated the next day. This recipe started from an old cookbook of my mother's. It's evolved over the years and is now a family favorite. This recipe easily doubles or triples for larger groups or freezing.

Stroganoff is one of the most favored of recent trending foods in the world. It’s simple, it is quick, it tastes yummy. It’s enjoyed by millions every day. Stroganoff is something which I’ve loved my whole life. They are nice and they look wonderful.

The ingredients needed to make Stroganoff:
  1. Prepare 12 red onion finely chopped
  2. Take Small clove garlic, crushed
  3. Prepare 12 lemon zested
  4. Make ready Handful mixed mushrooms, roughly chopped
  5. Get Small bunch coriander or parsley
  6. Prepare 120 g fillet steak bashed to 1/2cm thick and cut in to strips
  7. Take 120 g strips quorn or tofu w oxo cube flavour
  8. Take 1 tsp paprika
  9. Prepare Evoo, s&p
  10. Prepare Knob unsalted butter
  11. Get Brandy (good splash)
  12. Make ready 25 ml sour cream
  13. Take Green beans
  14. Take Potatoes for mash

With all that flavor, you might assume it's a complicated dish, but it's actually quite the opposite. Stir in the flour, salt and paprika. Remove the steak from the pan. Add the onion slices and mushrooms to the pan drippings.

Steps to make Stroganoff:
  1. Season meat w paprika, s&p, lemon zest.
  2. Put potatoes on to boil
  3. Fry onion w garlic til soft. Add mushrooms and butter, sauté until golden. Remove from pan.
  4. Steam greens
  5. Fry beef for two mins til brown but still pink inside, turning. Stir mushroom /onion mix back in, add brandy and reduce for 1 minute. Remove from heat and stir in cream and coriander.

Remove the steak from the pan. Add the onion slices and mushrooms to the pan drippings. Sauté for a few minutes, until the onion is tender. This version maintains all the classic flavors of the traditional dish, combining lean beef and onions with a creamy sauce made of a roux, beef broth, and sour cream. Beef stroganoff is the ultimate cold weather dinner.
